Kerry’s Spaghetti Bolognese

Spaghetti Bolognese

Ingredients:
1 large sweet onion, diced
4 cloves garlic, minced
1 large carrot, diced
1 tbsp. extra virgin olive oil
2 lbs. ground beef
1 lb. Italian sausage (mild)
1/4 cup sherry wine
3 Roma tomatoes, skin removed, chopped
48 oz. marinara sauce
10 basil leaves, chopped
1 bay leaf
1 large sprig rosemary, leaves only, chopped
1 tsp. fresh oregano, chopped
1 tsp. nutmeg
1 lb. spaghetti noodles

Directions:
In a large pan over high heat, cook the onions, garlic and carrots in the extra virgin olive oil. Add ground beef and Italian sausage and sauté until browned. Drain out excess fat. Add wine to the pan. Add remaining ingredients and let simmer for 20 minutes. Meanwhile, bring a large pot of salted water to a boil. Add the noodles and a touch of oil to water and return the water to a low boil. Cook – stirring occasionally to prevent the noodles from sticking – until pasta is still firm to bite, 8 to 10 minutes. Drain in a colander and serve sauce over noodles. Makes 10 servings.
