New Atria Recipe: Triple Berry Trifle

This recipe is a favorite from Lina Zarra, the Director of Culinary Services at Atria Rye Brook in New York.

Triple Berry Trifle  


7 oz. package instant vanilla pudding

2 cups sour cream

2 cups milk

2 teaspoons grated orange zest

3 cups whipped cream

1 angel food cake cut into bite sized cubes

(May also use pound cake or sponge cake if you prefer)

1 pint of strawberries sliced into quarters

1 pint of blueberries

1 pint of raspberries


Mix pudding, sour cream, milk and grated orange zest together. Fold in whipped cream – begin layering a trifle bowl (or any bowl) with angel food cake, then a mixture of a half pint of each of the berries and top with half the cream mixture.  Make a second layer following the same arrangement – top with more whipped cream and sliced berries to decorate – refrigerate for at least 2 hours. The trifle can be made the day before and refrigerated.
