
Mini Tomato-Pesto Tarts Recipe | The Atria Kitchen

“I received this recipe from a friend when I first moved to Rhode Island. It immediately became a family and party favorite. I started at Atria Harborhill as a volunteer and went on to become an Engage Life Assistant at the community. After a couple of years, I had to leave as my husband and I moved. I was fortunate enough to join Atria again as the Engage Life Director at Atria Bay Spring Village in 2014. I introduced this recipe to our cooking club. Since that time, the club has made these tarts several times and many of our residents enjoy them during happy hour. They disappear quickly – make lots!”
Prep time: 15 minutes | Cook time: 12 minutes | Servings: 15 pieces
Ingredients:
⅓ c. mayonnaise |
¼ c. mozzarella cheese, shredded |
3 tbsp. Parmesan cheese, grated |
2 tsp. basil pesto |
2 plum tomatoes, chopped |
15 ready-made phyllo tart shells |
Preparation:
Combine mayonnaise, mozzarella cheese, Parmesan cheese and basil pesto
Stir in plum tomatoes
Spoon filling evenly into tart shells
Bake at 375° F for 12 minutes
