Summary
What is dining like in a senior living community in Newport Beach, CA? An Atria Executive Chef shares how his experience in Michelin-level kitchens shapes meals and daily life for residents. His story offers a closer look at how thoughtful dining comes together each day.
Early in his career, Nathanael seemed to have everything the culinary world prizes: a likely Michelin recommendation, a buzzy restaurant group and long work nights. But he began to wonder: Were people eating his food for the enjoyment, or was his work seen as just a status symbol for customers?
The answer led him to a position as Executive Chef at Atria Newport Beach in Newport Beach, California, where his approach now shapes the dining experience for residents each day. And this year, he received the FLAME Award for culinary excellence.
How does a chef’s background shape senior living dining?
Chef Nathanael began his culinary career at 16, at a family-owned Thai restaurant in his hometown. After building his skills, he attended culinary school in France.
Following this formal training, he spent years cooking in luxury hotels and Michelin-starred kitchens. But this career track left him questioning the purpose of cooking. The closer he got to social prestige, the more he felt the pull toward something more meaningful.
“There’s a difference between cooking for food critics and social media influencers and cooking for people because they actually enjoy eating,” he says. “I was looking for something that had a little more purpose and connection.”
A little over a year into his role as Executive Chef at Atria Newport Beach, Nathanael has found exactly that.
Can senior living dining feel like a real restaurant experience?
Yes, very much so. Each day, Nathanael brings the same standards from his fine dining days to the table at Atria Newport Beach.
“I brought in a pound of caviar for New Year’s Eve,” he says with a smile. “In all my years working in luxury spaces, I was never able to do that just because I knew people would enjoy it.”
His culinary philosophy blends the French technique with a deep love for Southeast Asian flavors. Recent culinary standouts include individually plated apps with micro-garnishes for Easter and a whole smoked alligator for Mardi Gras. That last one, he notes, had residents talking for weeks.
At Atria Newport Beach, this approach shows up in meals that reflect residents’ preferences, traditions and feedback.
“We’re making very nice food,” Nathanael says. “We’re working with great vendors, just like in the restaurant industry. But there’s just a lot more meaning to it.”
How does dining shape daily life for residents?
To hear Chef Nathanael tell it, there are many ways this approach shows up in residents’ daily experiences:
- Daily engagement with the people enjoying the food
“They’re definitely not shy about giving feedback, and I love that,” Nathanael says, chuckling. - Discussing the role of food in culture
His residents have lived full, well-traveled lives. Many inquire about the food sources that Chef Nathanael uses. He says he places incredible importance on quality, freshness and sustainability. - Hearing fond memories of dishes tied to specific moments in their lives
You stop by a table to chat, and next thing you know, you’re hearing a great story about how the resident partied with rock stars in the ’70s in the Hollywood Hills,” he laughs. “They share some amazing stories.”
The people who bring decades of history, opinion and appetite to the table are exactly why Chef Nathanael finds his passion here every day.
What is the FLAME Award?
The FLAME Award is an internal honor that recognizes outstanding achievement among culinary professionals across Atria’s many communities.
True to form, Nathanael’s first reaction to learning about this recognition was more focused on his team than on himself. “I am very proud and honored to have this award, but I also just want to highlight the quality of my team and our community.”
That humility is baked into his leadership. His emphasis is less on personal spotlight and more on building teams, mentorship and a kitchen culture where staff feel proud of what they do.
It’s clear that this honor is well-deserved. Chef Nathanael puts his passion for food on display every day for the people who call the community home.
